With many of our gardens getting ready to reap the fruits of our labor, many of us will be looking at stocking our pantries with these items. Canning is a method of preserving food in which the food contents are processed and sealed in an airtight container. There are two home canning methods – Waterbath Canning and Pressure Canning. Waterbath Canning is recommended for preserving tomatoes, salsa, jellies, jams, fruits and other high-acid foods. Pressure Canning is the preferred method for meats, poultry, vegetables, chili, fish and other low acid foods.
